Delect Mackerel Rundown

Mackerel rundown, a beloved Jamaican dish traditionally made with salt mackerel, takes on a new twist with Delect’s tinned mackerel, popularly known as Flash Out, for its quick and easy preparation. Ideal for Emancipation and Independence Day celebrations, this version showcases the same rich, comforting flavours with added convenience. The dish starts with simmering coconut milk until it thickens into a creamy sauce, enriched with onions, tomatoes, garlic, thyme, and a hint of Spicy Hill Farms’ Scotch Bonnet Pepper Powder. The tender tinned mackerel blends perfectly with the flavourful sauce, making it a breeze to prepare without sacrificing taste. There’s no shame in your game with a substitute this DELECTable!

 

Total Time: 15 minutes

Ingredients:

• 4 cans Delect Mackerel

• 2 sachets Delect Coconut Milk Powder

• ¼ teaspoon (or to taste) Spicy Hill Farms Scotch Bonnet Pepper Powder

• 2 tablespoons Golden Brand Margarine

• 1 tablespoon Delect Sugar

• 1 cup onions, chopped

• 1/2 cup sweet peppers, chopped

• 1 sprig of thyme

• 3 plummy tomatoes

• 3 cloves garlic

• 2 stalks of escallion

• 1/2 teaspoon black pepper

 

Method:

Melt margarine and sauté all ingredients except Delect Mackerel.

Drain tomato sauce from cans into seasoning, allow to boil, and add Delect Coconut Milk powder. Mix well and thicken with a teaspoon of cornstarch, if necessary.

Add Delect Mackerel, gently bathe in sauce, and serve with roasted sweet potato.

 

 

Dukunoo with Delect Coconut Milk

It’s sweet, sweet Jamaica indeed when one reminisces on ol’ time Jamaican delicacies such as dukunoo. Also known as Blue Draws, the dish is second to none with its sweet and rich flavour profile, with the coconut milk adding a creamy undertone. Speaking of coconut milk, simplify the process using Delect Coconut Milk made with only two ingredients — coconut meat extract and water. During this Emancipendence period, dukunoo serves as a timely reminder of the creativity and adaptability of the ancestors who developed it. Today, dukunoo is prepared much the same way as it was traditionally, though modern conveniences like aluminium foil might be used instead of banana leaves for wrapping. So, gather your loved ones and celebrate the Land of Wood and Water in the tastiest way!

 

Total Time: 1 hour

Ingredients:

• 1 ½ cups grated sweet potato

• ½ cup grated green banana

• 1 cup Delect Cornmeal

• 1 cup Delect Coconut Milk

• 1 tablespoon Delect Cooking Oil

• 1 tablespoon Golden Brand Margarine

• 1 teaspoon baking powder

• 1 cup Delect Brown Sugar

• ½ teaspoon Delect Sea Salt

• 1 cup Delect Flour

• 2 teaspoon vanilla

• 1 teaspoon cinnamon

• 1 teaspoon nutmeg

• Raisins (optional)

 

Supplies:

• Baker’s cord or butcher’s string

• Banana leaf or aluminium foil

 

Method:

Mix all ingredients thoroughly until a paste is formed.

Place portions on a wilted banana leaf or aluminium foil.

Shape/fold the banana leaf or aluminium foil into a small packet and tie with baker’s cord or butcher’s string.

Place packets in boiling water.

Cook for 30 minutes or until firm.
