Seafood Made Easy: Three Fast, Foolproof Air Fryer Recipes
Cajun Shrimp
Total time: 15 minutes
Serves 2
Ingredients:
16 Rainforest Jumbo Shrimp
¼ teaspoon oregano
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon parsley or thyme
¼ teaspoon cayenne pepper
Oil spray or 1 tablespoon oil
Cajun butter
⅓ Cajun seasoning mix
2 garlic cloves shredded
2-4 tablespoon butter melted
Method
1. Combine all the ingredients for the Cajun seasoning.
2. Season the shrimp with ⅔ of the seasoning mix and oil. Toss the shrimp together then arrange in the air fryer bin.
3. Place in the air fryer to cook at 400 degrees F for six minutes, flipping halfway through.
4. In a bowl combine the remaining ⅓ seasoning mix with garlic and melted butter.
5. Remove the shrimp from the air fryer and toss in Cajun garlic butter.
6. Serve with mashed potatoes, and lemon wedges with an optional drizzle of hot honey over the shrimp

Coconut Snapper with Mango Mint Salsa
Total time: 30 minutes
Serves 2-3
Ingredients
1 bag Rainforest Caribbean Snapper Fillet
¼ teaspoon Salt
⅓ teaspoon Black pepper
For the breading
½ cup flour
1 teaspoon all-purpose seasoning
½ teaspoon paprika
½ teaspoon onion powder
¼ teaspoon black pepper
1 egg
¼ cup water
½ cup unsweetened coconut flakes
½ cup panko breadcrumbs
Oil spray
Mango Mint Salsa
1 ½ -2 cups Rainforest Frozen Mango Chunks
1 lime (juice)
10-12 mint leaves
½ cup diced red pepper
½ cup diced onion
2-3 pinches of salt
Method
For the Mango Mint Salsa
1 Make sure the mangoes are defrosted and dice them into smaller cubes.
2 Mince the mint leaves very finely.
3 Dice the onions and the red pepper.
4 In a bowl combine the mango, mint, red pepper and onions.
5 Add lime juice and salt then stir to combine. Set aside in the refrigerator.
For the Snapper
1 Remove snapper from packaging and season with salt and black pepper.
2 In a shallow dish combine flour, all-purpose seasoning, paprika, onion powder, and black pepper.
3 In another shallow dish mix together coconut flakes and panko bread crumbs.
4 In a bowl whisk together the egg and water.
5 Dip the fish fillet in the flour, then the egg mixture, then lastly the coconut panko mixture.
6 Set air fryer for 10 minutes at 400 degrees F.
7 Place fish in air fryer and spray one side with oil.
8 After 10 minutes flip it to the other side spray and cook for an additional 5 minutes.
9 Top with mango salsa and serve.
