Entrée by Chef Oji Jaja

Training at the Ritz-Carlton has provided a foundation of attention to detail and the unique ability to elevate simple ingredients to masterpieces, and has landed him in exclusive kitchens worldwide. Terre et Mer: Oyster mushroom filled chicken roulade accompanied by pan-seared salmon atop a decadent saffron orzo, sautéed seasonal vegetables and beurre rouge.
Paired with Bogle Vineyard Pinot Noir: Bright red raspberries and cherries sparkle both in the glass and in the aromatics of this lovely and elegant red wine. The full, yet subtle entry leads to flavours of ripe blackberry, cherry preserves and touches of cloves and anise. Velvety and full of finesse from barrel aging, the wines finishes with medium tannis and touches of brown sugar and allspice.
