What to do when your favourite chocolate bar forms part of an amazing birthday cake? Why, share it with as many people as possible; applaud the creator whom we discover to be Nestlé culinary assistant Tonia Blake, who honed her skills at B&E training and catering academy; and cop the recipe. Mission accomplished! Here are some fun facts about the cake. Did you, for example, know that a Red Velvet Kit Kat cake requires a 45-minute bake time, 24 Kit Kat Chunky for the border of the cake and three four-finger bars for the cream cheese Kit Kat frosting?
No worries. Neither did we! What we can, however, imagine is the joy you’ll experience preparing this visually appealing cake with friends and/or family.
KIT KAT White Chocolate Cake
Ingredients• ½ cup butter
• 2 large eggs
• 2 egg whites only
• ¼ cup vegetable oil
• 2 tbsps Toll House Cocoa Powder (available at Loshusan, Lee’s,
General Foods, MegaMart & John R Wong)
• 2 ½ tbsps red food colouring
• 1 tbsp vinegar
• 2 tsps vanilla
• 2 ½ cups all-purpose flour
• 1 tsp baking soda
• 1 tsp salt
• 1 cup buttermilk (1 cup Omega Low-Fat Milk and 1 tbsp vinegar)
Method:
Heat oven to 350˚F and lightly grease two (2) 8oz baking tins and dust
with flour. Cream butter and sugar until light in colour, then add eggs one
at a time, beating well after each. Add oil, Toll House Cocoa Powder, food
colouring and vanilla, then stir into cream mixture until evenly combined.
In a separate bowl, sift together flour, baking soda and salt, add ½ dry
ingredients to butter mixture and ½ cup buttermilk, stir for 2 minutes until
smooth (be careful not to overmix). Add second half to butter mixture along
with the remaining ½ cup buttermilk.
Divide batter amount into two prepared pans and bake for approximately
25-30 minutes.
KIT KAT Cream Cheese Frosting
Ingredients:• 2 cups cream cheese (roomIn a mixer, cream whipping cream until stiff. Add icing sugar, ¼
temperature)
• 1 lb icing sugar
• 2 tsps vanilla extract
• 1 tsp strawberry flavouring
• 4 bars Kit Kat Chunky White
(blended into crumbs)
• 18 bars Kit Kat Chunky White (outer layer of cake)
• 2 cups whipping cream (ice-cold)
Method:

Mix together until smooth.
Decoration
Spread Kit Kit frosting evenly on one layer of the cake. Add second
layer to the top. Spread remaining frosting on top and sides of cakes
evenly. Decorate cake using Kit Kat Chunky Bars in a circular motion.
Topped with sliced strawberries.
To serve, use each bar of Kit Kat Chunky White to guide you in
cutting a slice of cake. Each cake yields 24 slices.
