DESSERT COURSE: Jamaica Food & Drink Festival participating pâtissier Nadine Hoballah-Burie’s second act closed the festival’s Brunch at the Gallery event Sunday last and with it the Rousseau sisters’ retread of The Rock’s culinary DNA. “The desserts that the Rousseau sisters wanted me to do were inspired by their theme of The West India Table, in keeping with the old-time desserts that Jamaicans would have eaten back then. We chose recipes that will appear in Suzanne and Michelle Rousseau’s second cookbook, like the scones, mango fool and ‘chocho’ pie, for example. They wanted the desserts to be served full-sized and easy to cut, just as they would have been at home, and wanted guests to serve themselves and share together. Simple and authentic to the Caribbean experience.”
