T&T Chefs Throw Down: Chef Annette De Gannes
Chef Annette De Gannes owns and operates a catering company, Sace Mange, with her husband Peter and two sons.
Annette is very proud of her Trinidadian heritage (including traces of Carib Indian) and this inspires her menu creations.
Her signature dish is the Curry Crab-Stuffed Dumplings, a take on the very popular Tobagonian dish. She also creates a wonderful pumpkin bisque and tiramisu. Garnish is a big part of Chef De Gannes’ presentations and she utilises bright and beautiful items such as pepper shells and leaves to bring her presentations to life!

Menu:
– Cream of coconut pumpkin soup, coconut ribbons, lobster bisque, mango chow salad, mini curry crab stuffed dumplings, saltfish bhagee stuffed dumplings (for the non-shellfish eaters)
Dessert:
– Tiramisu – Fresh fruit salad with a basil and vanilla infusion
