Sweet Sautéed Corned Beef in an Egg Blanket
Preparation Time – 30 minutes
Makes four servings.
Sweet Sautéed Corned Beef
Ingredients
2 tbsp Lasco Vegetable Oil
1/4 cup finely diced sweet peppers
1/4 cup finely diced onions
1/4 cup finely diced tomatoes
1 sprig thyme
2 stalks escallion, finely chopped
1/2 cup grated Mozzarella cheese
1/2 cup Lasco Pineapple Slices, cut into chunks
1 can Lasco Corned Beef
Method
Heat oil in a sauté pan and sauté half of the onions, sweet peppers, tomatoes, escallion and thyme until flavours are combined. Stir in corned beef and add pineapple and remaining seasonings. Top with grated Mozzarella cheese.
Egg Blanket
Ingredients
8 Large Eggs
Salt and pepper to taste
Cooking Spray
Method
Beat eggs until light and fluffy, then add salt and pepper. Pour 1/4 of the beaten egg into the pan, and roll it around a little until the pan is coated. As soon as the mixture sets and can be lifted, spoon 1/4 of the corned beef mixture in the centre. Fold the ends closest to you, then fold the other sides until it is completely wrapped. Plate and serve.
