However, for Gary Matalon and his wife Tina and their business partner Kevin Bourke, branding the new undertaking — Usain Bolt’s Tracks and Records — was merely the starting point.
The trio sought to establish a firstworld, first-class venture integrating the ambiance of a sports bar with a menu that nods to Jamaican flavours, spices, and dishes.
