JuicyChef Father’s Day 2010
This Sunday we celebrate our fathers. I’m lucky to have a great man as my “Daddy”. When I was growing up he was firm yet super kind, and instilled in me alongside my mother important values and stressed the value of a good education.
He’s also a serious foodie and I learned a lot from him what to expect when dining out. As much as he loves going out to eat, he loves when we cook for him. We haven’t had a barbecue in a while, and I think it’s time to dust off the grill! Why not have a barbecue in your father’s honour? Sundays are a great day to have one and especially on this occasion.
To keep it interesting, get a mixed grill going: chicken, shrimp, a variety of sausages, and ribs or steaks. Some vegetables taste wonderful hot off the “barbie” such as corn on the cob, sweet peppers, and pumpkin. You must have a special cocktail or themed drink to celebrate. I will share two, one with alcohol and one without, which both children and teetotallers can enjoy. Have lots of ice and water on hand because it’s been super hot lately. To keep it even more simple, for dessert you can also grill some mangoes and pineapple and serve it with ice cream, or if not, pre-order your cake from your preferred caterer or bakery.

BBQ Marinade for Chicken or Steaks
Ingredients:
1/2 cup honey
1/2 cup soy sauce
1/2 cup Pickapeppa sauce
1/2Cup wholegrain mustard
1 Scotch Bonnet or hot pepper, finely chopped
1 Tbsp dried mixed herbs
Method:
Mix all the above ingredients and use on your choice of meat for at least a couple hours or overnight.

BBQ Marinade for Shrimp
Ingredients:
1 large pack of shrimp
2 limes, grated rind
2 stalks of dill, roughly chopped
1/2 cup olive oil
Salt to taste
Method:
Mix lime zest, dill and olive oil together and add salt to taste.
Add the shrimp and leave in the marinade for 30 minutes.
Barbecue shrimp one minute per side and it’s done!

Long Island Iced Tea
This is a classic cocktail which is very masculine and potent. This is for one serving.
Ingredients:
1/2 oz Vodka
1/2 oz Gin
1/2 oz Light Rum
1/2 oz Triple Sec
1 oz Lime Juice
Cola
Method:
In a tall glass add all the spirits and lime juice, top with your favourite cola. Add ice.
Iced Green Tea with Passion Fruit and Ginger
I would need an entire article to wax lyrical about the health benefits of green tea. Lately, I’ve been making my iced tea with green versus traditional black tea.
Ingredients:
10 cups of water
2 cups of Passion Fruit Juice
1/4 cup of sugar (or to taste)
2-Inch piece of ginger, washed and sliced
12 Green teabags
Method:
In a large saucepan, bring the sugar, ginger and water to a boil over high heat. Reduce temperature and simmer for 5 minutes.
Take saucepan off the stove, add green tea bags and let it steep for 3 minutes.
Remove tea bags and strain liquid into a punch bowl or large pitcher.
Add passion fruit juice.
Cool down then refrigerate until very chilled.
