Babette’s Festive Feast
We’re in the kitchen this week with Elizabeth Robertson of Babette’s Feast. Add these great recipes to your Christmas menu.
Cinnamon Whole Roasted Chicken Filled with Rice Pilaf
Ingredients:
1 Whole Roaster
4 pegs garlic
2lbs rice
1/2 cup raisins
1 pack pine nuts
Salt and pepper to taste
2 tbsp cinnamon
Splash of olive oil
Method:
Rub cinnamon and olive oil salt and pepper on skin and under breast skin of chicken.
Sweat the garlic in olive oil with raisins and then add rice and chicken stock. Allow to cook.
Add roasted pine nuts
Stuff in cavity of chicken and then roast till done.
Shrimp and Beef Kebabs
Ingredients:
3lbs Shrimps
4lbs Beef tenderloin cubed
5 assorted sweet peppers
4 large onions- quartered
Large bamboo skewers
Salt and pepper
For the beef: soya sauce,olive oil and thyme and garlic.
For the shrimp:olive oil, salt and pepper and lemon grass
Kebabs:
Stick on skewers alternating vegetables eg beef, onion, beef, sweet pepper, beef mushrooms beef. Do the same for the shrimp.
Shrimp with cranberrys and vegetables
Ingredients:
5lbs shrimp
Vegetables: brocolli ,snowpeas, stringbeans [any of these]
Salt and pepper
Olive oil
Butter
2 medium onions (wedged)
1 head of garlic (crushed)
Method
Season shrimps with salt and pepper and diced onions and crushed garlic.
Marinate overnight
The Following Day:
Sweat onions and garlic in butter
Add vegetables and stir fry till just done.
Add the shrimps and lightly saute till done (do not over cook).
Grilled vegetable pasta salad in marinara suace
Ingredients:
Marinara sauce
4lbs Tomatoes
3 tins of diced tomatoes
2 heads garlic
2 large diced onions
4 basil leaves
Oregano leaves
Olive oil
Vegetables: zucchini, eggplant, black olives
2 boxes of penne pasta
The sauce
Sweat seasoning in olive oil.
Add tomatoes and allow tomatoes to break down. Add chicken stock and reduce for two hours
Pasta
Add pasta to a pot of boiling water until al dente
Grill vegetables and then cut into cubes
Set aside
When ready to serve add garlic, onion and olive oil then add pasta, vegetables and sauce.
Toss and serve hot.
